This is a dish I made while trembling with hunger! Including taking pictures, it took me less than 30 mins to prepare. I love salmon AND I love avocados. This is a great way to combine these two tastes into a mild and filling, yet light snack. Most of you will probably have the ingredients in stock. If not, I strongly recommend you to change your habits, because you are really missing out some good stuff!
You will need:
1.- 1/4 of an onion, a tomato, 1-2 avocados. I used two
2.- salmon fillets, app 400 gms.
3.- coriander leafs (cilantro)
4.- tortilla breads
1.- Set your pan on LOW heat. Not too low though
2.-Line with baking foil, add oil, sprinkle with seasoning of choice
3.- Cut your salmon in smaller bites
4.- Put them in the frying pan with foil, turning occasionally
In the meanwhile, make the guacamole:
1.- In a blender, add tomato, onion and avocado
2.- Add cilantro
3. Wroom, season with lemonjuice, salt and pepper. I use lots of lemonjuice and pepper.
Time for wrapping up: Now you will know why this is so quick and time saving. Just lift the foil with the cooked salmon on to a plate, and continue using the pan for heating the tortilla-breads 🙂 Saves time and the dishes!
Add guacamole, salmon and maybe some sourcream perhaps?
