Juicy apple cake

This is my one and only special apple cake recipe. Others that I have tried are either too dry, too “eggy” or do not have enough apples in them. I found this recipe in a paper-newspaper long time ago and cut it out. So, every time I want to make it, I have to search high and low to find the recipe. Now, I’ll never loose it!

You will need:
4-5 apples
150 gms sugar
2 eggs
100 gms butter
75 all purpose flour
35 gms white almond flour (or 150 gms all purpose flour alltogether)
1,5 tsp. baking soda
1 tsp. vanilla powder
1 tsp cinnamon powder


Peel the apples and remove the seeds.
Cut into thin slices.

Preheat oven to 200 degrees.

Mix all dry ingredients.
Whisk together eggs and sugar.
Melt the butter and add to the egg-mixture.
Slowly add the flour and the dry ingredients to the egg-mixture while stirring.
Grease/foil a cake tin and pour the batter into it.


Press the apple slices in the batter, try to make a nice pattern 🙂
Add more and more apple slices
Just when you think there is no more room, put in a handful 😀
Sprinkle with sugar and cinnamon, it will give a caramel like, sticky surface

Bake in the oven for app 40-45 mins.
The best way to have it; luke warm with vanilla ice cream!
