Cuddle up on your couch with a warm bowl of this delicious and warming soup which is perfect at this time of the year. Most of the ingredients are probably already in your stock.Like most of my fish dishes, this one is also self-composed, or at least uninspired. Fish is so easy to deal with after a long day at work. Even when it is frozen, it is easy to use in countless ways with different sides to make a full and healthy meal. At least here in Norway it is often readily available and quite reasonably priced as well.
2-3 tbs cooking oil (canola)
1 small onion, finely chopped, fresh or frozen
2 small potatoes, cubed
1 tbs turmeric
Salt/pepper to taste
1 tbs white, all purpose flour
3-5 dl milk (or water)
200 gms cod fillet, in small cubes
1 cup spinach, finely chopped
Saute the onion and potatoes in the oil for a couple minutes, add the spices/flour. Stir well. Add the milk and adjust the consistensy the way you want it. I like it thick! Finally, add the fish and the spinach and let it simmer with the lid on for 5 minutes and it’s ready to be consumed!
